I suppose this is what we get for trying to trick her into eating Brussels sprouts 😉
For the record, it was a Brussels sprouts, cranberry and quinoa salad and it actually turned out quite tasty. You can find the full recipe over at Gimme Some Oven.
The only substitution we made was swapping in some crunchy roasted chickpeas (the only part Mayhem DID like) for the pecans (due to Mayhem’s nut allergies).
Yum.
My new favorite Brussels sprout recipe. You can easily just leave the pecans out of this! And we couldn’t find the ricotta salata so we just used regular ricotta drained well.
